Swiss and Bacon Dip

Saturday, we had one of my sisters and her family over to watch a UFC fight. We typically alternate which of us hosts the fight nights, to keep it balanced. The host pays for the fight and makes dinner. My mom had just picked up one of Rachael Ray's cookbooks for me at a thrift store {she always finds the good stuff, I swear} - this version was her 30 Minute Meals: Get Togethers. Perfect timing! I thumbed through it, and marked a few potentials. The recipes are broken down by menu. For example a "Tapas Party", "Couch Coach's Nachos", "Fast, Slow-Cooking Dinner", etc. There are menus for Brunches, Lunches {& Tea Parties too} - Party Bites {little dishes with big taste} - Great Dates {romantic dinners for 2} - The Big Game {Menus for sports fans} - Small-idays {small holiday celebrations at home} - and Dinner at Eight {better than a restaurant 24/7}.

I opted to try the "Linger at the Table, Not at the Stove" menu. It was a huge hit and I was relieved to not be stuck in the kitchen the whole time, I timed it just right too. He'res the appetizer recipe. Swiss and Bacon Dip.

That sounds really good... I would have left out the nuts, too - hubby doesn't like them.
We have a great French restaurant and bakery in town and I bet their fresh bread they make every day would be SO good with this dip. I would be as big as a house if I made it, though. MMMMMM
