Christmas Breakfast

If you're like most parents I know, you'll be up late Christmas Eve finishing up last minute wrapping, stuffing stockings, working on prep for your Christmas dinner. What will your family be having for breakfast Christmas morning? I stumbled across this slow cooker recipe that does the hard part for you - So your family can wake up to breakfast already done! I think it'd be equally tasty to substitute the cooked bacon with cooked Jimmy Dean sausage...

Breakfast {while} In Bed.
1 bag (32 oz.) frozen hash brown potatoes
1 lb bacon, cut into pieces, cooked and drained
1/2 cup diced onions
1 green pepper, diced
3/4 lb cheddar cheese diced
1 dozen eggs
1 cup milk
1/2 tsp dry mustard
S and P

Layer the hash browns, bacon, onions, green pepper and cheese in a slow cooker, layered. Add the cheese. Beat  eggs, milk and mustard, salt & pepper together; pour over mixture and cook on Low for 10 hours.

Because it was just Bill, me and Nano, we had some coffee and cookies (yeah, not healthy) while we opened gifts, then I made Mickey Mouse waffles with strawberries and whipped cream.
I'll try this for another time when we have the kids visiting.
