Apple Butter Slow Cooked Pork Tenderloin

It is common for us to buy a big cut of meat at Costco, divvy it up among three freezer bags, and pull a bag out when needed. We had recently purchased a 9 lb. pork tenderloin, which I cut into thirds. Even still, three pounds of meat is a lot for our small family to eat in one sitting. So I like cooking the meat and then rolling it over into another meal the next day. Here is the first day's meal. the foundation for tomorrow's recipe.

3 lbs pork tenderloin
S and P
1 1/2 cups apple cider
2 garlic cloves, diced or grated
1/2 cup apple butter
1/2 cup brown sugar
Dash of cinnamon
Dash of cloves

Season your tenderloin with salt and pepper. Place meat in bottom of slow cooker, add garlic and apple juice. Cover and cook on low for 6 hours.

After the six hour mark, mix together remaining ingredients to make a thick paste. Smear tenderloin generously and continue cooking another 2 hours on low. I actually placed the tenderloin on a fitted rack for the last 2 hours of cook time, but it will be just as tasty if you don't have a rack for your slow cooker.
